Abi’s favourite meal is probably whole baked salmon with hollandaise sauce, mini boiled potatoes and salad. But it isn’t always that easy to find a whole salmon, and one day last year when she had planned to make it for a guest, I was unable to source the vital ingredient. Instead she produced (admittedly with a little help) the following Salmon Supper for Six:

Grilled salmon steak on a bed of wilted spinach

Steamed green beans

Mini boiled potatoes

And, I must say, it went down very well indeed.
