This cake is guaranteed to bring a bit of sparkle to any dull day!


For the cake:

  • 225g self raising flour
  • 225g caster sugar
  • 225g butter
  • 4 eggs, beaten

For the filling and topping:20170325_162514

  • 1 tbsp strawberry jam
  • 100g butter, softened
  • 1tbsp milk
  • 100g icing sugar
  • 75g caster sugar
  • 1/2 tsp vanilla essence
  • multi-coloured edible stars


Pre-heat the oven to 180C and grease and line two 20cm cake tins.

Sift the flour into a bowl. Add the sugar, butter and eggs. Stir until the mixture is smooth and put half of the mixture in each of the tins. Smooth the top and bake for about 25 minutes (or until the cakes are risen and firm). Leave in the tins for five minutes before turning them onto a wire rack to cool.

Meanwhile, make the buttercream. Put the butter in a large bowl and beat until soft and fluffy. Sift the sugars into the butter, and add the milk and vanilla essence. Beat again until fluffy.

Once the  cakes are cool, spread half the buttercream on one of the cakes and top with the jam. Place the second cake on it, and cover with the rest of the buttercream. Finally, sprinkle with plenty of little stars.
