When Becki asked if she could do egg on toast for lunch, I expected a pile of scrambled eggs, or maybe a couple of fried ones. I didn’t expect French Toast scattered with fruit (mainly which she’s picked in the garden), and drizzled with maple syrup. But, needless to say, I didn’t complain.

Here’s what she did.

Ingredients – per portion

  • 1 or 2 slices of bread
  • 1 or 2 eggs
  • a handful of berries or chopped bananas
  • approx 1tbsp maple syrup

Method

Break the eggs into a shallow bowl and mix with a fork. Dip a slice of bread into the bowl and coat both sides with egg. Heat a frying pan over a medium heat and quick fry the bread on both sides until the egg is cooked and starting to brown.

Place the French Toast on a plate, scatter the fruit on top, and drizzle with the syrup. Serve immediately.
